What do I do with my seized chocolate?

If moisture got into it, it may have seized and needs to be thrown out. Once this happens it cannot be re-melted. However, you may just have it at too high of a temperature. Chocolate melts best at a LOW heat setting. Take the chocolate off the heat and try heating it on low again once it has cooled. Do not put it in the refrigerator, this will cause it to condensate and thus - seize due to moisture. Let it cool to room temperature and try on low heat. If this doesn't work, you may need to start over with chocolate that you haven't heated or added anything to yet.
